Tasty Vegan Potato Bake

Ingredients

3 Large Potatoes (doesn’t really matter what kind)

1 Small Onion

Oil (for the bottom of the dish)

Vegan butter or spread (i use nutelex)

Salt and pepper

Soymilk

Flour

nutmeg

Preheat Oven to 200 degrees Celsius.   Prepare a medium cassarole dish with oil to cover the bottom.

Wash and slice the potatoes and cut them into rounds.  Slice your onion.

Melt 2 tablespoons of butter in the microwave, then add 2 tablespoons of flour and stir.  Heat in the microwave for 1 minute.

Gradually stir in 1 cup of soymilk and nutmeg

Microwave on high till sauce is thick.  Stir every minute.

Add one layer of potatoes to the bottom of the dish . Add some sliced onions to the top of the potatoes, season with salt and pepper, and add a dollop of the vegan butter and some sauce over the layer and repeat until you’ve run out of ingredients.

Add some sliced onions to the top.

Pour Soymilk into dish to about half way up.

Bake for 45 minutes-1 hour (until the potatoes are very tender, and the sauce is bubbling).

    Gawd i loves my taties! They are the most versatile of all the vegies! is there nothing they cannot do??
    I’m loving your recipes! I still haven’t tried that mushroom one yet, as i keep forgetting to buy pastry! D’oh! However, i have plenty of potatos in the pantry, so this will be getting in mah belleh very soon 🙂

    Hmm, I’m actually not sure! I do quite like spicy food, like indian and thai..but then i love pasta too… and anything chocolatey is good 😀 I just like food, hehe.
